Cinnamon Bun Pancake Ingredients:

In medium bowl combine flour, sugar, salt, baking powder and cinnamon with a whisk. Mix well making sure everything is combined.
- 1-½ cup All-purpose Flour
- 3 Tablespoons White Sugar
- ½ teaspoons Salt
4 teaspoons Baking Powder
- 1 Tablespoon Cinnamon
On a Separate bowl beat together eggs, milk, corn syrup, melted butter, and Vanilla.
- 2 whole Eggs Beaten
- 1 cup Milk

- 2 Tablespoons Corn Syrup (Ooops! I thought I had Corn Syrup, turns Out it was popcorn oil. So, I opted to continue on with the Recipe without the corn Syrup and it turned out just fine.
- ¼ cups Butter, Melted
- 1 Tablespoon Vanilla
Stir in flour mixture. Whisk well until well combined.
Heat lightly oiled griddle or frying pan over medium/low heat. Use a 1/3 cup measuring cup to pour batter onto griddle. Brown on both sides.
Time to flip
Serve warm with Vanilla Icing on top and a side of salty baked bacon.
Vanilla Icing:
Ingredients:
- 2 cups confectioners’ sugar, sift before measuring
- 1 1/2 tablespoons butter, soft
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 3 to 4 tablespoons milk
Preparation:
Combine all icing ingredients in small mixing bowl. Stir until smooth and well blended. Adjust for spreading consistency if necessary, adding more milk or more confectioners’ sugar. I added about 5 -6 Tablespoons of milk for the perfect consistency for the Cinnamon Bun pancakes.
The Perfect Baking Bacon Method:
Use thick-cut smoked bacon. Preheat oven 400 degrees F. Place baking rack on sheet pan and arrange bacon in 1 inch layer on the backing rack. Bake 20 minutes. until bacon begins to brown. Remove the pan carefully from the oven: there will be hot grease in the pan! Transfer the bacon to a plate lined with paper towels and serve warm with Cinnamon Bun Pancakes. YUM!!!
I line my baking sheet…Cookie pan with tin foil for easy clean up.
